    Summary: "Elegant Looking & Great Reference Book!"

    I bought an earlier edition of this book (in softcover) & have loved it! Now, a couple of years later, I decided to purchase this deluxe hardcover updated edition as a gift for a friend & am totally delighted with its quality even to gilt edged pages! It's an amazing reference book of cooking terminology, good explanations, and the excellent glossary & appendix are packed with invaluable information in many categories. I've just re-ordered two more copies to have on hand when I need a future gift. I work with young singles & on occasion have a wedding invitation here & there. Being in my 70's, Amazon's price for this lovely book makes it affordable as a quality wedding gift that I know they can use often as a great reference.

    FYI this is NOT a small book! It is some 785 pages with some 270 pages devoted to expanded individual glossaries covering, to name a few, beef glossary, bread glossary, herb glossary, kitchen tools, cookware & bakeware glossary, sauces & stocks glossary, shellfish glossary, spice glossary, wine glossary, etc. The remaining 34 pages are an appendix which covers such subjects as substituting ingredients, U.S. measurement equivalents, seasoning suggestions, & many more.

    Add to that, this edition was updated & published in 2009.

    I'll say that this is a great bedtime read. Not so much for me to use when I actually don't know something because I go straight to my computer to look things up. But for a leisure and educational read, this is the book to go to... Only thing is that this book makes me hungry at night...

For instance, "Don't add sugar or flavorings (to whipping cream)... until the cream forms soft peaks. You'll get more volume that way" (page 141).
